Annie Munting's Christmas Cake



˝ lb butter ˝ lb castor sugar 2 tsp allspice
3/4 lb flour 4 eggs ˝ tsp salt
1 lb currants 2 oz quartered glacé cherries  
1 lb sultanas 1 lb candied citrus peel
2 oz chopped walnuts    4 oz ground almonds
1 gill milk
4 tsps brandy (or black treacle)


Cream the butter & sugar. Beat the eggs to a froth & stir in gradually. Beat well. Add flour, salt + allspice. Fold in carefully with a metal spoon. Add fruit, milk + treacle. Beat well & pour into cake tin. Smooth the surface with a knife dipped in hot water.

Bake in slow oven for 2.5 hours in a moderate oven, regulo 3, 170 deg C or 325 deg F.

Cake tin 4" x 10", with a raised collar of brown paper to stop the top from burning.
